Gnocchi di Patate A classic Northern Italian mashed potato gnocchi, light and tender, and served with a simple sauce.
Gnocchi alla Romana A traditional Roman-style semolina gnocchi, baked until golden and finished with butter and Parmigiano Reggiano.
Gnudi A Tuscan-style ricotta and spinach dumpling, delicate and pillowy, similar to ravioli but without the pasta.
