In Alberta we are lucky to be able to source great hot house veg throughout the year - including fresh herbs, green beans, eggplant, tomatoes, cucumbers, peppers and more. We will use these veg and of course the storage crops of the winter season to make delicious meals around vegetables - from sides to mains, soups and starters. Join Chef Owner Kathryn Joel for an introduction to filled pastas and learn to make our egg-yolk enriched fresh pasta dough, perfect for creating light and delicate filled pastas. You’ll prepare two types of filled pasta with sauces. Begin with Ravioli filled with winter squash, served with a deliciously aromatic parsley and walnut chopped sauce. Next, make Swiss Chard & Ricotta Tortelloni, served with a simple but flavourful brown butter and sage sauce.

Kofta, Falafel and Grill Bread

In this class we will work together to make falafel, two different types of kofta (one with beef and pork, and one with chicken), and grill bread. We will also make hummus, tzatziki, green tahini, and a chopped salad to pull this delicious meal together. We will talk through the process of making a perfect falafel from sourcing and soaking the chickpeas, to bringing it together and of course frying them as well as talk through tips and tricks for making a kofta that stays moist, and is is full of flavour. Grill breads are a simple bread that are easy to bring together – we will chat about working with yeast doughs, kneading by hand vs. in a machine, how to prep these ahead and more. You will then return to your dough to practise rolling, twisting, and shaping before giving your pretzels their signature lye bath and baking them to a deep golden finish.
