You go home with a live starter and a shaped loaf ready for your own oven. Owen Petersen ran Prairie Mill Bread; he'll take you from feeding the starter to pulling a proper crust out of a Dutch oven. Between folds, Kathryn Joel fills the waiting with panzanella, roasted tomato soup and herb butter, eaten with Owen's bread. Soup is made with chicken stock — ask ahead for the vegetarian version.
